Red beet soup
Dracula’s favorite soup, because of the amazing color the red beet gives it.Even people who are not fans of this vegetable will love it once they try the velvety texture, where the earthy taste of the beets is gently enhanced by ginger, coconut milk and my favorite: lemongrass.
- 1-2 shallots, chopped
- 3-4 red beets, diced
- 3-4 potatoes, diced
- 1 lemongrass stick, chopped
- 1 can(400g) coconut milk
- A thumb sized piece of ginger, minced
1. Saute the shallots briefly, add the rest of the ingredients and bring to boil.
2. When the potatoes and red beets are soft, blend with a hand mixer.Print
